Sugar-Free Vegan Milk Shake with Goji Berries and Bananas

I always have a container of almond milk on hand. I use it in baked foods, in my oatmeal or muesli. This time I’ve made a vegan milk shake, and almond milk is an ideal non-dairy alternative with its creamy consistency and nutty flavor. It contains no lactose or cholesterol, so if you want to reduce your consumption of dairy it’s great to use as a healthy substitute. Stay tuned for my recipe on how to make your own almond milk!

Goji berries are native to China, and like most berries are very beneficial to your health. They’re rich in vitamin A and other antioxidants. You can find dried goji berries at health food stores or grocery stores like Whole Foods. I soaked mine in a little water before blending to plump them up.

For creaminess and sweetness, I’ve used extra ripe bananas; so no added sugar is needed. If you enjoy smoothies, I recommend always having a bag of frozen banana chunks in the freezer (see picture below).

Cut up and freeze ripe bananas in a freezer bag. Soak goji berries for a few minutes in water to plump up.

Vegan Almond Milk, Goji Berry and Banana Shake Recipe

  • 1 cup almond milk
  • 2 frozen bananas, chopped
  • 1/2 cup dried goji berries, soaked in water
  • 1 cup ice

    In a blender, combine frozen chopped bananas, goji berries, almond milk and ice. Blend on the highest speed until smooth and creamy.

    Total Time: 5 minutes
    Yield: 3-4 cups
