Easy Shrimp Salad with Peppery Greens, Sunflower and Pumpkin Seeds

I think every meal should be special, even lunch. So when I’m home relaxing by myself I try to stay away from the easy Ramen Noodles and cook something healthier and from scratch. After you make this you’ll feel a sense of accomplishment, even if it’s just a simple salad! I had a smaller version for myself but I made this recipe to serve a nice appetizer size for four.

Any kind of green would work well, I did a nice mix of peppery greens. You can mix greens like arugula, mustard greens, watercress, and spinach. Lemon juice in the dressing and shrimp pair well and add a fresh, summery feel. I added pumpkin and sunflower seeds for the nutritional value and crunch. Seeds are healthy and taste similar to nuts, so if you’re allergic to nuts, they may be a nice alternative.

Easy Shrimp Salad with Peppery Greens Recipe

Dressing:

  • 1 teaspoon Dijon mustard
  • 1/4 cup olive oil
  • 1/2 lemon, juiced
  • 2 teaspoons honey
  • 1 teaspoon salt
  • 1 teaspoon pepper
  • 5 cups mixed greens
  • 1 dozen shrimp, peeled and deveined
  • 2 tablespoons pumpkin seeds
  • 2 tablespoons sunflower seeds
  • 1 tablespoon olive oil
  • 1 teaspoon lemon juice
  • salt and pepper to taste

    In a medium bowl, mix together shrimp, olive oil, lemon juice and salt & pepper. Let sit for about 5 minutes. Preheat a grill or pan on medium-high heat. Whisk dressing ingredients together, and set aside.

    Grill (or pan fry) shrimp 2-3 minutes on each side or until cooked through. In the meantime, in a salad bowl, evenly toss the dressing with the greens, pumpkin seeds, and sunflower seeds. Arrange greens on serving plates. When shrimp are done, top onto greens and serve immediately.

    Total Time: 20 minutes
    Yield: 4 servings
