Spiced Chickpea Curry with Mango Powder

I’ve been making a lot of curries lately (including this super easy and delicious shrimp coconut curry), most of them coconut based. But over the past few weeks I started to experiment more with mango powder (or amchur powder), a fairly new ingredient to me. Mango powder is made from raw green mangoes and adds a really nice and tart flavor (not unlike lime juice) to curry dishes.

Kale Salad with Oranges, Blueberries, Red Onions and Olives

Kale Salad Ever since we moved back to the East Coast, I’ve been appreciating the seasons more and with Spring just around the corner, I get excited to try out different salads. I love the addition of fresh fruit to salads and this particular mix of ingredients is a must try. I combined sweet oranges and blueberries with sliced red onions and olives on a bed of kale leaves.
