This year’s Memorial Day weekend was warm and muggy and all I wanted to eat was something refreshing, yet satisfying to fill me up. So to kick this Summer off, I made an easy strawberry salad mixed with watercress, red onions and crunchy hazelnuts. I love the addition of fruit into green salads, they bring a whole new dimension to the dish. This simple salad takes little time to prepare and will easily go into your list of Summer salad recipes.
This combination is delicious with the sweet strawberries and tangy zing of the onions. If you don’t have watercress, then spinach will do just fine. Also, this salad is on the sweet side, so adjust the amount of honey in your dressing if needed.
Recipe below…
Prepare dressing and slice strawberries and onion.
Toss everything together until everything is well-coated with dressing.

3-4 cups watercress
1 small red onion, thinly sliced (or to taste)
4 large strawberries, sliced or quartered
1/4 cup hazelnuts
1/4 cup olive oil
1/8 cup red wine vinegar
2-3 tablespoons honey or agave syrup
a pinch of salt
a pinch of pepper
Wash watercress leaves and pat dry. Slice or quarter strawberries and thinly slice red onion. Whisk together olive oil, red wine vinegar, honey, salt and pepper.
Place watercress, red onion, strawberries and hazelnuts into a bowl and toss will with dressing.
Total Time: 10 minutes
Yield: Makes 2-4 servings

Try to stop eating the strawberries right out of the carton and toss them in your salads!
