Last week I made a large batch of homemade muesli and was thinking of a way to use it all up instead of eating it for breakfast. Since there are oats and dried fruits in the mix I thought of baking some chewy cookies. I just mixed in a few chocolate chips but otherwise this is a pretty simple recipe.
You can use store-bought muesli (I like Bob’s Red Mill) or easily make it yourself using my recipe. These cookies are moist on the inside and crisp on the outside. They’re so delicious and easy, the perfect way to use your muesli mix!

Mix dry ingredients together and in a separate bowl mix the wet ingredients.
Mix wet and dry ingredients together.
Stir in the chocolate chips and muesli.
Spoon onto a cookie sheet and bake for about 10 minutes.
Enjoy with a glass of milk!
Muesli Chocolate Chip Cookies Recipe
2 cups muesli
3/4 cup chocolate chips
1 cup whole wheat flour
1 teaspoon baking soda
1 teaspoon salt
1/2 cup coconut oil or butter, melted
3/4 cup light brown sugar
1 teaspoon vanilla extract
1 egg
Preheat oven to 375°F.
In a bowl, mix flour, baking soda, and salt. In a separate bowl, mix together coconut oil, light brown sugar, and vanilla. Then mix in the egg.
Add flour mixture to the wet ingredients and mix well to combine. Stir in chocolate chips and muesli.
Shape into balls and place on a lightly greased cookie sheet or silpat liner. Bake for 10-12 minutes. Allow to cool
Total Time: 30-40 minutes
Yield: Makes about 2 dozen cookies
