I love garlic. I use it in most of my dishes and highlight it’s bold flavor in recipes like my garlic pasta, where I use a whole head of roasted garlic. One snack dish I make quite often is sautéed garlic edamame. Edamame is usually boiled in water then eaten plain or with a pinch of salt, but I just love the flavor combination cooked with crushed garlic.
Edamame beans are immature soybeans in their pods and you would typically find them at Japanese restaurants as a snack before your main dishes come out. You can buy bags of edamame in the freezer section at most grocery stores, but you can also find frozen bags of already picked pods. As most soybeans are genetically modified these days, I try to buy organic edamame as it is non-GMO.
Garlic Edamame Recipe
2 cups frozen edamame, thawed
2 garlic cloves, crushed
1-2 teaspoons oil
a pinch each of salt and pepper
Heat oil over medium heat in a small pan. Add the edamame, crushed garlic, salt and pepper. Saute for 5-7 minutes, until the garlic gets a little brown and crisp.
Total Time: 10 minutes
Yield: 2 cups
