So I decided to spend tonight in celebration to bid Adieu! I used a Japanese Shochu called iichiko. Shochu is a Japanese spirit distilled from barley, sweet potatoes or rice. It has a very clean and refreshing flavor, but use vodka if you can’t find it. I combined lime and pineapple juice, adding in a few drops of Angostura Bitters for a more “bittersweet” experience. Pair with crispy salmon and say farewell to summer and hello to fall!
Pineapple and Lime Cocktail Recipe
1/2 cup shochu (iichiko brand), or vodka
1/2 cup pineapple juice
1 lime, juiced
angostura bitters, to taste
4 teaspoons sugar
plenty of ice
Split between two glasses, pour shochu (or vodka) over ice and sugar. Mix sugar to dissolve. Pour in a few drops of angostura bitters, pineapple and lime juice. Stir and enjoy! To garnish, add some pineapple chunks and slices of lime.
