Oven roasted potatoes are one of the easiest side dishes to prepare. And they pretty much work with almost any main course. There are so many different variations but this one is really simple using ingredients you already have in your kitchen.
The mustard coating brings out a delicious flavor in the potatoes and gets crunchy while the inside stays creamy. Be creative with this recipe. Sometimes I add in some chopped carrots or mushrooms, and if you want to make it an entree, bake with sliced Italian sausage.

Dijon Mustard Roasted Potatoes Recipe
2 pounds yukon gold potatoes, quartered
2-3 shallots or small onions, quartered
5-6 whole garlic cloves
2 tablespoons dijon mustard
3 tablespoons olive oil
2 tablespoons dried herbs (like parsley, rosemary or thyme)
2 teaspoons salt
3 teaspoons pepper
Preheat oven to 425°F.
In an oven-safe pan, add the potatoes, shallots, and garlic. Mix in the mustard, olive oil, salt, pepper and herbs. Bake for 45 minutes to an hour. To brown evenly, toss the mixture every 15-20 minutes or so with a metal spatula.
Total Time: 50-70 minutes
Yield: Makes 4-6 servings
